Do weapons have weapon arcs, or does the fact that the unit has line of fire to the target mean that every weapon on the unit and every element in the unit can fire at the target. For example in this picture, if the tanks were MKIII and would the left side casemate guns be able to fire at the Martian, and therefore only 2 shots per tank, or would you just consider all 3 as being able to shoot? I assume all 3 but would like clarification.

The rule book specifies 180 degrees from the front of the vehicle or tripod, or from the side of the vehicle for sponsons. So for the MKIII in this case the right sponson could fire but not the left.

I found it in both the soft cover book and the hard cover book. For the soft cover book look on page 12 and 13 under Line of Sight. And I think I see the problem you are having. In the second paragraph of this section it reads "An infantry element has line of sight to the target if you can draw an imaginary straight line from the center-front of the element's base to..." It says "infantry" but it should say the "shooter" as it applies to tanks and artillery as well. At least that has been the universal interpretation. That interpretation is reinforced by the statement in the seventh paragraph (on page 13) where it says "For now, bear in mind that where tanks have turrets or side sponsons, they are able to shoot either all around or from the side, in which cases both range and line of sight are calculated from the center of the model's side or rear accordingly."
The hard cover book says exactly the same thing on pages 41 and 42.

Note that in the picture, had the tank platoon been oriented more to the right a bit, a few of the left could fire. But, then the right sponson would start to be off the mark. Difficult situation there.
