When I fight a martian, I fight it until it blows up. usually this means dropping its armor to Zero. I have seen rules that say a Tripod is destroyed by 3 critical hits and an Overseer requires 5 critical hits. Do people play that way?

When you score a hit on a tripod that gets past the armor, you roll on the Tripod Damage chart. Sometimes you'll get a result that destroys the tripod with one hit. More often it nibbles away at the armor. I've found that about half the time you kill it with loss of armor and the other half it gets killed by one of the instant death results.

Getting a few hits on a martian allows weaker units a chance to penetrate it's amour. While it is important to destroy them, allowing Infantry and MGs a chance to kill them means the martian player can not ignore them.

Yes, if you have an infantry-heavy army then it can be a viable strategy for your heavier stuff to try and knock a few armor points off as many tripods as possible rather than keep firing at the same one until it's dead. Get the armor down a little and all your infantry becomes a real threat.

I have found if you do not ping off the armor early, they will be in your base eating your dudes pretty fast. Your dudes will not be able to respond, and get minced. If they are all damaged, then the little dudes get a chance.
I have never played with the three critical hits method.

I have found it very important to crack the armor of a tripod, get it down to 9 or 10 just to allow infantry a chance.
I have also played the sneaky game. Wait until many tripods are close together and then pound the bejeezes out of one, trying to blow it up. At armor 5, a couple of MG units can roll 18 dice and get 9 hits, expecting 7 damaging hits. That's one roll +6 on the damage chart, a good chance for a hit that blows the tripod and maybe it's neighbors to bits.

I am doing testing for 2nd Edition. The new damage tables are better for the 2nd Edition. Roll to hit, roll to penetrate and then roll on damage table.

Like any game, hot dice and cold dice can drastically change a game. Getting the right combo of stats is much harder then it looks! Only after playing hundreds of games can give the best result of stats be made. I have faith the new rules will show this.

Yes some of the stats are being changed. MGs are not so powerful.
But like jmccarroll said Hot dice and cold dice drastically change a game.
I ran a playtest game at a Con and with tanks getting hits but just 1 point off armor of the Tripod each time. An infantry unit fired and with its rifles scored a hit, penetration and blew up the tripod (3 10s in a row).
